BANANA RUM OLD FASHIONED 50ml Hina rum 2 dash chocolate bitters 10ml banana syrup* Method: build Add all the ingredients in a mixing glass, stir until is chilled, strain in a rock glass and garnish with orange peel SPICED SYRUP : combine equal parts light or dark brown sugar with water. Bring it to a simmer and cook until the sugar has dissolved. Add 1gr cinnamon, 1gr nutmeg, 0.5gr cloves, orange peel let rest for 2hrs strain all the ingredients and bottled. BANANA SYRUP : combine equal parts light or dark brown sugar with water. Bring it to a simmer and cook until the sugar has dissolved. Add the bananas and simmering for 10 minutes. Strain out the bananas, trying to get as much of the syrup off the bananas as you can. After the syrup has cooled, store it in an air-tight container, in the refrigerator, for up to 2 weeks. The very last step we let it rest in our amaro cask for another extra month.
